Beetroot Stuffed Omelet Paratha

Ingredients for Paratha Dough:

White Flour (Maida)- 2 cups
Salt- 1 tsp
Butter- 2 tsp
Beetroot Water- Enough to make firm dough
(Mix the above ingredients to make a medium soft dough, after cover the dough with a wet cloth for 1 hour).

Ingredients for Omelette:

Eggs- 4
Potato (Boiled, Shredded)- 1/4 cup
Red Pepper- 1 tsp
Salt- to taste
Cumin Seeds- 1/2 tsp
Turmeric- 1/2 tsp
Tomato (chopped)- 1
Onion (chopped)- 2 tbsp
Green Chilies- 2
Cilantro- 2 tbsp
(Combined the above ingredients and mix well)

 

Method:

  1. In a non-stick pan, Melt butter on medium heat and add in the egg mixture and cover.
  2. After 5 minutes carefully flip the omelette. Dish-out when the omelette is cooked.
  3. Divide the paratha dough into desired sizes, make round balls, and roll them out into a round shape roti (chapati’s).
  4. Now on a roti, place omelette on top and cover the omelette with another roti (chapati); and press the edges of both the rolled roti’s firmly.
  5. Place the roti into a hot pan (tawa) with oil and cook. When the roti is golden-ish brown from both sides dish out and garnish with your favorite sauces.
