Stir-fry Shrimp Noodles

Ingredients:

Large Shrimp (shelled, deveined)- 1 cup
Udon noodles (precooked)- 2 cup
Green onion- 1 stalk
Cabbage (chopped)- 1/4 cup
Bean sprouts (boiled)- 1/4 cup
Garlic (chopped or grated) – 2 cloves
Ginger (grated)- 2 tsp
Soy Sauce- 3 tbsp
Asian Sesame oil- 1 teaspoon
Olive oil- 2 tbsp
Chilli Sauce- as per required
Ground pepper- 1 tsp
Salt- as per required
Scallions (chopped)- 1/4 cup (garnish)

Method:

  1. In a suitable non-stick pan, heat olive oil. Add shrimp and stir fry over high heat until they are curled. Remove the shrimp in a plate.
  2. Add in: green onion, cabbage, bean sprouts, garlic, ginger and stir fry for 5 minutes. Add in soy sauce, Asian sesame oil, chilli sauce, curled shrimps and cook for 2 minutes.
  3. Cook the udon in a pot of salted boiling water for two minutes. Drain and add in with the shrimp mixture.
  4. Stir-fry over high heat until completely cooked. Season with pepper and salt.
  5. Dish-out and garnish with scallions…. and ENJOY….:)))
