Gajar Khoya Burfi- Sweet Carrot Fudge- Recipe


Grated carrots- 2 cups
Evaporated milk- 2 cans
Ghee/ un-salted butter- 1/ 4 cup
Sugar- 1 cup
Chopped Kaju- 3 tbsp
Chopped Almond – 3 tbsp
Chopped Pistachios- 3 tbsp
Green Cardamom – 6
Saffron- a pinch
Golden raisins- 3 tbsp
Khoya- one pack


  1. Combine cardamom, saffron, evaporated milk and grated carrots to high flame for 5 minutes, after boil lower the flame.
  2. After 80% of the milk has been reduced add butter/ghee, and golden raisins. Stir continuously and continue to cook on medium flame.
  3. When the butter/ghee is apparent on top of the gajar-ka- halwa, it means your delicious sweet is ready.
  4. Place the gajar-ka-halwa in a serving dish, and garnish with Khoya, Kaju, Almond, Pistachios.
