Hot and Spicy Chicken Biryani- Recipe

Ingredients:

• Rice- 1.5 kg (dip rice in water for at-least 10 minutes)
• Chicken- 1 kg
• Onion- 2 large size
• Garlic and Ginger paste- 1 spoons
• Dried Plum (آلوبخارا, Aloo Bukhara)- 8
• Red Chilli Powder- 1 tsp
• Turmeric Powder- 1 tsp
• Yogurt- 2 spoons
• Roasted cumin powder (zeera)- 1 tsp
• Garam Masala Powder- 1 tsp
• Green Cardamom Powder- 1/2 tsp
• Coriander Powder-1 tsp
• Green Coriander and Mint Leaves- 2 tbsp
• Tomatoes- 1 large
• Salt-to taste
• Oil- 5 tbsp (Olive oil is the best)
• Lemon Juice- 1 spoons
• Food Color- Orange color
• Kewara Water- 2 spoons

Method:

  • Firstly add: yogurt, green chilli paste, tomato diced, turmeric powder, red chilli powder, coriander powder, roasted cumin powder, garam masala, ginger and garlic paste, plum dry and salt; in a bowl with chicken to mix. Marinate for around 4 hours.
  • In a suitable pan, fry the sliced onions until a golden/brown look, and save half fired onions for Garnishing.
  • Add the marinated chicken (from step 1) in the pan 15 minutes, until the water from the chicken and ingredients, dries.
  • On the other hand, half boil the rice.
  • Combined the half boiled rice and chicken together in a suitable pan. Mix lemon juice, kewara water, and orange food color and pour on top. And place it on low heat for 15 minutes.
  • Garnish with fired onions, and enjoy…:)

TIP: While half boiling rice add one table spoon of vinegar, for a more whiter look…
